Baked Potato Wedges (3 Ingredients!) - Simple Joy (2)

Happy Monday, friends! Did you guys have a good weekend? This weekend our oldest kiddo did his first ever sleep over. We have been pretty adamantly against sleep overs for a while now, but we decided (after a good conversation with the other parents that might have left them thinking we are totally nuts . . . ) that we would give it a chance. It went awesome! We picked up a very tired but very happy 10 year old yesterday.

Is it weird that I’m actually more proud of Nathan and I?

So, one thing that I don’t have enough of on the blog is side dishes. Easy sides that you can feel really great feeding your family. These roasted potato wedges, totally fit the bill. They are only three ingredients and require only 10 minutes of hands on time. Serve them with my Baked Chicken Tenders and dip them in my copycat Chick Fil A Sauce.

How to Make Potato Wedges

These are so easy to make and they come out perfect every single time!

  1. Toss the cut up potato wedges with oil and grill seasoning.
  2. Spread them on an even layer on a baking sheet.
  3. Bake them for thirty minutes and flip them half way though.

How to Cut Potato Wedges

The key to this recipe turning out right is cutting thin enough wedges so they cook well. I got a good 7 to 8 slices out of each potato, and they came out totally soft in the middle, but with a nice crispiness on the edges.

You want to cut them in half and then in half again and then cut each fourth in half as well.

All sounds good! My top round roast is only 1.38 pounds. How long should that be cooked for medium rare??

I’m very very late in responding to this, but I would start checking a roast that small at about 25 minutes into the second half of the cooking. (So after you have turned the oven down)

Do you peel the potatoes first? They look really good. I like recipes with only 3 ingredients.

Simple and delicious. I don’t have a lot of confidence in my air fryer, so I appreciated the instructions. Turned out great!

If you click on the word “grill seasoning” in the recipe card, it will take you to the recipe for it. Otherwise it can be purchased.

I will have to try this recipe . We eat a lot of baked potatoes, I call them steak fries, but never tried them with the grill seasoning. Thank you for all your great recipes
